About the founder
Valeria Cobos
Food Engineer and Certified Health Coach
My career began in product development and later expanded into venture capital and corporate innovation, where I worked with startups, corporates, and investors shaping the future of food. Through that experience, I realized that many of the industry’s challenges are not only about formulation or technology, but about how “healthy” is defined, communicated, and understood.
At the same time, my own healing journey sparked a deep curiosity about psychology and nutrition, leading me to explore the gut microbiome and its role in human health. That exploration reshaped how I understand nourishment. I came to see that the way we eat is
shaped by our environment, personal history, emotions, and internal biology, influencing hunger, preferences, and long-term patterns that ultimately drive consumer behavior.
My vision is to revolutionize the food industry by addressing it at its origin: human behavior.
I believe meaningful innovation happens when science, biology, and behavior are realigned, transforming food from the inside out and restoring its role as a foundation for long-term well-being.

Over nearly 40 years of experience, he has worked on and led projects for organizations

Soledad Gurovic

Holds a PhD in Chemistry and is a licensed Pharmacist, with over 15 years of experience
working at the intersection of science, ingredients, and food innovation. She partners with food and ingredient companies to translate complex scientific knowledge — including
dietary fiber, fermentation, and structure–microbiota interactions — into functional,
scalable, and clinically validated solutions.
Her career combines applied research, ingredient development, and leadership in
FoodTech, collaborating with startups, companies, and R&D teams from the laboratory to the marketplace.
